(Serves 4)
Ingredients:
4 (six ounce) salmon fillets
3 tablespoons Dijon mustard
¼ cup fresh herbs, chopped fine
Canola oil to sauté
Method:
Season the salmon with salt and pepper and brush with Dijon mustard, lightly press herbs on the salmon.
Heat a sauté pan on medium high heat. When hot add enough oil to cover the bottom of pan.
Sauté salmon herb side first and cook for 2 minutes. Turn over, cover sauté pan and turn heat to medium. Cook until salmon reaches an internal temperature of 135°F.
